Cowboy Grub

Max has had the privilege of speaking at the preschool all our children have attended on several occasions. Cowboy Max struts in wearing his cowboy hat and chaps while carrying his collection of goodies wowing those sweet, innocent souls. Can't blame the kids--rattles off rattle snakes, sheep skulls, ropes, spurs, saddles--what is more cool that that? A little guy named Deuce went home and told his mother all about how Cowboy Max shoots the bad guys with his gun. ??!! We don't know which part of his presentation translated into gun talk, but it made for a hilarious story later.

One year I made a little DVD of our family cattle ranch to give the children an idea of what takes place out there. Max wasn't overly impressed with my idea. He took it, but I think he wondered just how cool a slide show like that would be to a bunch of three, four and five year olds. Plus, wouldn't that interfere with his ultra cool presentation? Imagine my absolute smug-joy (feel free to borrow that term I just coined) when Max received a thank-you book full of drawings of their favorite things and right at the tippity top of the list was the video. This year Grant's preschool class had a field trip at the pumpkin stand. Of course Cowboy Max was one of the volunteers in the pen giving rides. Max and a sweet boy named Tyler hit if off. According to Tyler's mom, he really enjoyed Max.
One day Tyler and his mom Heidi were reading a magazine. In it, there was a recipe for Cowboy Cornbread. Tyler immediately knew who would love a helping. We they came out Monday, they brought a most delicious plate full of these goodies for Max. Heidi was sweet enough to share the recipe with me.

Here it is:

Cheesy Cowboy Cornbread
Preheat oven to 350
Spray 8X8 pan with cooking spray
1 1/2 cups flour
1/2 cup cornmeal
1/2 cup sugar
2 cups grated cheese
1 Tbsp of baking powder
1/2 teaspoon salt
2 eggs
1 1/4 cups milk
1/2 cup vegetable oil

Stir together flour, cornmeal, sugar, cheese, baking powder, salt.
Beat eggs, milk and oil until the mixture is light yellow.
Pour the egg mixture into the flour mixture and stir until everything is moist.
Pour the batter into the greased pan.
Bake 35 minutes or until the edges are light brown.
